Holiday Fruit Cheesecake
from Danette Randall, Dessert Diva

Ingredients:
  • 2 packs cinnamon graham crackers ( about 25-30 crackers)
  • 5 tbls butter
  • 1 tsp. allspice
  • 3 8 ounce packages softened cream cheese ( 3 cups)
  • 1 cup sugar
  • 3 eggs
  • 2 tsp. almond extract
  • 1 tbls. allspice
  • 1 cup sour cream
  • 1 cup mixed candied fruit and peel ( find in produce dept.)
  • 1 cup green cherries ( find in produce dept.)
  • 1 cup walnuts
  • whipped cream to top
Preheat oven to 325. Lightly grease a 9-inch springform pan.

Finely grind graham crackers, add butter and allspice and mix well. Press into prepared pan onto bottom and up sides. Place in refrigerator.

In large bowl, beat softened cream cheese and sugar, add eggs, almond extract.allspice and sour cream and beat until smooth. Fold in fruit, cherries and walnuts.

Pour into prepared crust and smooth top. Bake for 50-55 minutes until edges just start to crack. Center should slightly jiggle. Take out and cool for 1 hour and then cool completely in refrigerator. When ready to serve, slice and put on plate, top with whipped cream and garnish with leftover candied fruit.
