Dark Chocolate Candy Cane Butter Cookies
a Dessert Diva recipe

Ingredients:
  • 3/4 cup softened unsalted butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 tsp. pure peppermint extract
  • 2 cups flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 2 cups dark chocolate chips ( I like Hershey's)
  • 5 crushed candy canes
  • powdered sugar for dusting
Preheat oven to 350

In a small bowl mix together flour, salt and baking powder. Set aside

In large mixing bowl, use a beater or hand mix the butter and sugar. Add egg and peppermint extract and mix until smooth and creamy. Add flour mixture to butter mix and beat slowly. Batter will be slightly crumbly. Fold in chocolate chips and candy canes. Drop by tsp. onto ungreased baking sheet.

Bake for 9-11 minutes until edges just start to brown.

Lay cookies on parchment paper that has been slightly dusted with powdered sugar. Top cookies with powdered sugar.

note: I make them small (it makes about 2 1/2 dozen) but you can drop by tbls. if you prefer bigger cookies. I also top with a little bit of candy cane before serving. Merry Christmas.
