Maraschino Cherry Chocolate Chunk Blondies
a Dessert Diva recipe by Danette Randall

February 4, 2008

Ingredients:
  • 1 cup unsalted melted butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tsp.vanilla
  • 2 1/2 cups flour
  • 1/2 tsp.salt
  • 1 tsp.baking soda
  • 1 cup maraschino cherries
  • 1 3/4 cup chocolate chunks
Preheat oven to 350.

Spray a 9 x 13 inch baking dish ( I like glass for these blondies) with non-stick cooking spray

Put maraschino cherries on paper towel and let dry out while making batter.

Melt butter and let cool slightly. Stir in brown sugar and mix well. Beat eggs in separate dish and then add to butter mix. Stir in vanilla

Add flour, salt and baking soda to brown sugar-butter mix and stir until well combined.

Cut up cherries into quarters. Fold into batter. Fold in chocolate chunks

Bake for 25-30 minutes until top is golden and edges are starting to look dry.DO NOT OVERBAKE.

Let cool completely. Cut into squares. Dust with powdered sugar and garnish with extra cherries if desired. Serve.

ENJOY!
