Crunchy Dark Chocolate Raisin Oatmeal Comfort Cookies

Ingredients:
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup softened butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups oatmeal ( quick cooking oats)
  • 2 cups honey roasted peanuts
  • 1 1/2 cups dark chocolate chips
  • 2 3.5 ounce boxes of dark chocolate raisinets ( can use milk if can't find dark chocolate)
Preheat oven to 350

Mix flour,baking powder and salt in a small bowl, set aside

In large mixing bowl, cream butter and brown sugar. Add eggs and vanilla and mix well. Fold in oatmeal.

Add flour mixture to wet mixture and combine well. fold in peanuts,chocolate chips and raisinets.

Drop by tablespoon onto ungreased baking sheet. Bake for 11-12 minutes until edges start to brown, take out of oven and leave on baking sheet for one to two minutes before transferring them to rack or waxed paper.

Let cool, eat and ENJOY!
