Recipes for Cinco de Mayo New Mexican Style

Famous Hatch Green Chile Cheese Burger serves 4
  • 1 - 4 oz can - hatch diced green chiles
  • 1 - 15 oz can - hatch green medium enchilada sauce
  • 1 lb ground beef
  • flour tortillas
  • fiesta blend of cheeses
  • garlic salt or garlic powder
  • salt and pepper to taste
Start by mixing Hatch diced green chiles and ground beef in a mixing bowl, salt and pepper to taste, add garlic powder and mix well. Form patties and grill or fry. Warm tortillas and fold around hamburger patty. In a medium sauce pan, heat Hatch green medium enchilada sauce and spoon over tortilla wrapped patties, spoon sauce over the top and top with cheese.

Serve with fried potatoes.

Roasted Garlic and Tomato Shirmp
  • 2 can - Hatch diced tomatoes and green chiles with roasted garlic
  • 1 pound of shrimp
  • salt and pepper
Begin by marinading shrimp for at least 1 hour in a refrigerator in Hatch diced tomatoes and green chilies with roasted garlic, stiring occasionally. Salt and pepper to taste. Heat a medium to large saute pan to medium high heat and saute until pink and serve with cilantro.

Great as an appetizer.

Tex-Mex Style Fajitas 2 cans of hatch diced tomatoes & green chilies Tex-Mex style flank steak or skirt steak 1 medium yellow onion 1 red medium bell pepper 1 green bell pepper tortillas canola oil salt and pepper to taste cheese sour cream

Marinade flank steak for at least 1 hour in Hatch diced tomatoes & green chilies Tex-Mex style in a refrigerator. Grill flank steak until medium rare about 5-8 minutes on each side depending on size. While steak is grilling, slice onions and peppers into strips and saute in canola oil until carmelized. Serve with tortillas, and pepper, onion mix, top with cheese and sour cream.
